Renowned celebrity chef, restaurateur and longtime Chopped judge Scott Conant is doubling down on his partnership with Resorts World with a new concept at the company’s Hudson Valley location, answering a community desire for a world-class dining option. THE KITCHEN, an SC Spot, which is set to open at Resorts World Hudson Valley this July, will expand on Conant’s soulful approach to Italian and American cuisines.
This marks the second collaboration between Resorts World and the restaurateur behind The Americano in Atlanta. In January 2018, the company announced Conant would launch a new concept at its soon-to-open Resorts World Catskills. Today, Cellaio Steak stands as the premier dining option at the fully integrated casino-resort, frequented by gamers, golfers, and visitors.

The new restaurant is a direct response to community feedback for a cutting-edge dining option at Resorts World Hudson Valley. As New York State’s newest casino, the facility has become a destination in Orange County beyond gaming since opening its doors in December 2022. Resorts World has sought to deliver world-class amenities and entertainment to Orange County while also celebrating local businesses in the region. That includes a partnership with Newburgh Brewing Co. on the MonsterPitBoss IPA – served exclusively at the Resorts World Bet Sports Bar as well as Monster Golf Course at Resorts World Catskills.

Designed to appeal to both locals and visitors alike, the new concept will blend Conant’s dedication to quality with the convenience of fast-casual dining, all set in a welcoming atmosphere that reflects his passion for elevated hospitality.
The eatery is set to open this July, highlights from the menu include barbecue favorites such as beef brisket and pulled pork; comforting classic entrées like chicken parmesan and steak frites; and an assortment of handcrafted sandwiches featuring crispy fried chicken, porchetta, and grilled eggplant.
